This is one of my favorite recipes to cook for my family and friends because it’s simple, fairly quick and delicious.  When prepared right the skin is nice and crispy and inside is nice and juicy….Enjoy!

 Ingredients                                                                                                                                                                                                  (1) 3 1/2 to 4 lb.  Whole Chicken  (cut into two pieces)                                                                                                                       3 tablespoons of vegetable oil                                                                                                                                                        thyme                                                                                                                                                                                                        Kosher salt and pepper

Directions                                                                                                                                                                                                     Place chicken on a work surface, skin side up and season chicken liberally with the salt and pepper.  Dice 1/2 cup of the fresh thyme and sprinkle over the season chicken.

Poor your vegetable oil into your skillet and set it to medium-high heat.  Once the oil is very hot, place both chicken halves in the skillet skin side down.   Season the other side of the chicken with salt, pepper and thyme.

Set bricks on top of your chicken or use heavy pots making sure the chicken is pressed into the skillet.  Pre-heat your oven to 400 degrees.  Cook the chicken on the stove top for 15 minutes and then finish in the oven for 5 minutes.
